Chia seeds originate from the Salvia Hispanica plant and exhibit dual variations: black and white. Primarily, black chia seeds are cultivated, with approximately 5% to 8% of white chia seeds concurrently grown due to a recessive gene affecting color.

This selective cultivation enhances the yield of white seeds, leading to plants that predominantly bear white seeds. While black and white chia seeds are almost indistinguishable in terms of nutrition and flavor, they differ in appearance—white seeds are larger, thicker, and broader. The significant distinction, however, lies in availability and cost: white chia seeds are rarer due to their lower production, making them more expensive than their black counterparts.
